One among the many Kerala traditional vegetarian preparation of the Malayalees.It goes well with boiled rice kerala sadhya.or with a roast —pauljoseph

What You'll Need
Ingredients
  • 1 cup Sweet Potato(any vegetable like potato , carrot , beans, snake gourd , ash gourd etc)
  • 1/4 teaspoon Cayenne
  • 1/4 teaspoon Turmeric
  • 1 teaspoon Salt
  • 2 teaspoons Oil
  • 4 cloves Garlic
  • 5 pieces Onion or Shallots
  • 1/4 teaspoon Pepper Pods
  • curry leaf optional
Directions
  1. Cut the vegetables into small cubes or match sticks size. Stir in cayenne , Turmeric and salt, add 2 tbsp. water and cook for 5 minutes until the vegetable is tender. 2. In a pan, heat the oil, add crushed garlic-onion- pepper and curry leaves. Fry on medium heat till the onions are light brown, stir in the vegetables and fry till browned all over. ( This dish can be made with yam, potato , carrot , beans, snake gourd , ash gourd etc.)

Delicious! The potatoes soak up the spices wonderfully.

I used 3 idaho potatoes, a head of broccoli, 3 teaspoons cayenne and turmeric, 2-4 tablespoons vegetable oil, and 8-12 cloves of garlic. I boiled the potatoes in the spiced water, and separately steamed the broccoli over spiced water as well, before throwing everything into the pan to sauté.
