Black Currant Oatmeal Pancakes with Walnuts and Organic Yogurt

This variation on pancakes is a delicious and healthy alternative. You can also substitute any type of dried fruit, nuts, fresh fruit, or toppings-your mind is your limit! —Mariya

What You'll Need
Ingredients
  • 2 eggs
  • 1 cup milk
  • 2 cups oatmeal-quick oats
  • 1/2 cup dried black currants
  • 2 teaspoons brown sugar
  • 1 teaspoon vanilla extract
  • butter or cooking spray for pan
  • 1/2 cup organic vanilla yogurt
  • 1/2 cup walnuts-toasted
Directions
  1. In a bowl, mix the eggs and milk.
  2. Add oatmeal, currants, brown sugar, and vanilla into the bowl.
  3. Heat and butter a pan (or spray with cooking spray). Ladle batter into the pan and cook pancakes until just brown on each side (about 2 min).
  4. Top pancakes with yogurt and walnuts.

Looking for something different and found these... What a great find! I didn't have quick oats, so I added about 4 T of 2% plain yogurt and let the batter sit for a bit before cooking. I also put 1/4 c dried blueberries in. Cooked on a buttery grill pan and topped with honey. YUM!

These look so yummy! Different, but delicious. We eat oatmeal with raisins most morning, topped with yogurt. What an exquisite variation on that theme. I'm making these on Sunday! Thanks for posting this recipe.
