This Indian pico de gallo is made with cucumber, onion, tomato, cilantro, chilis and vinegar. It goes well with any Indian rice dish. —amreen

Ingredients
  • 1 yellow onion
  • 1 peeled cucumber
  • 1 tomato
  • 1 1/2 teaspoons cilantro
  • 1 jalapeno
  • 1 tablespoon white vinegar
  • Salt to taste
Directions
  1. Dice the onion, cucumber, and tomato into small pieces. Finely chop the cilantro.
  2. Deseed and dice the jalapeno.
  3. Mix all these ingredients in a bowl with the vinegar; salt to taste.

Onions, cucumbers, and tomatoes all come in varying sizes. Can you amend the recipe to include approximate amounts? Equal parts or 1/2 cup each? Thanks!

@Austin, this is a very adaptable recipe so you can add more or less depending on which vegetables you like. Also if you had cuminm red chili powder, and a light oil it enhances the flavor and helps making the seasoning stick.
