Ingredients
  • 1 large cucumber - chopped
  • 1/2 cup cherry tomatoes - cut in half or fourths
  • 1/4 cup green onions -- green part only -- chopped
  • 2-3 tablespoons good olive oil
  • 1/2-1 lemon (depending on your taste)
  • salt to taste
  • pepper to taste
  • 1 bunch parsley -- chopped
  • 3/4 cup quinoa - cooked according to package directions
Directions
  1. Mix all ingredients in a bowl. Enjoy!
