A quick and easy lentil soup that is protein packed and made with ingredients you probably already have in your house! —Allison Hecht
Ingredients

shallots

3
large carrots

4
celery stalks

2 cups
lentils

4
large red potatoes

4 cups
water

1 tablespoon
olive oil

1/2 tablespoon
salt

1 tablespoon
ground pepper
Directions

Place a large pot over medium heat and drizzle with olive oil. Dice your shallots and saute until golden brown. While the shallots are cooking, chop up your celery and carrots.

Once the shallots are brown, add your carrots and celery and continue to sauté for 5-10 minutes. Add in your lentils, water and potatoes and bring to a low boil. Continue to simmer for 35-40 minutes while adding salt and pepper to taste. Ladle into bowls and enjoy!
