Fig and pear tart with almond cream


Makes 1 tart


  • 1 egg
  • 2 tablespoons cane sugar
  • 1/2 cup ground almonds
  • 2 cups flour
  • 1/2 cup butter
  • 1 pinch salt


  • 1/2 cup butter, softened
  • 2 eggs
  • 1 cup almond powder
  • 4 tablespoons cane sugar
  • 1 pear
  • 2 figs
  • 1 pinch cinnamon
  1. For the dough: In a bowl, beat together egg and sugar until foamy. In another bowl, put the flour, almonds, salt and butter cut into dices. Rub the ingredients together until mixture resembles breadcrumbs or sand. Add this mixture to the egg/sugar mixture and mix well until dough forms. Wrap in plastic wrap and set in the fridge for an hour.
  2. For the almond cream, whisk together sugar, butter, cinnamon and almonds for 5 minutes. Incorporate the eggs one by one
  3. Roll out the dough on a floured surface and place it in a pre-buttered mould.
  4. Spread the almond cream on the bottom of the dough. Peel the apple and cut into slices (not too thin). Cut the figs in four. Place pear and fig slices on top of the almond cream.
  5. Bake for 30 minutes on 350F
