Author Notes: This is a delicious ingredient to have in your store cupboard. It's easy to make, with ingredients you probably have lying around. It may damage your social life, but it is worth it. I add it to dips, stews and pasta sauces —Canalcook
- Head of garlic
- Sprig of thyme
- Pinch of chili flakes
- Olive oil
- Separate the garlic cloves and peel them.
- Put them in an ovenproof ramekin along with the thyme, a pinch of chili flakes and a couple of peppercorns.
- Cover with olive oil.
- Wrap in aluminium foil and roast in the oven at 160C (320 Fahrenheit) for 45 minutes to an hour until soft and golden.
