This is a delicious ingredient to have in your store cupboard. It's easy to make, with ingredients you probably have lying around. It may damage your social life, but it is worth it. I add it to dips, stews and pasta sauces —Canalcook

Ingredients
  • head of garlic
  • sprig of thyme
  • pinch of chili flakes
  • Peppercorns
  • Olive oil
Directions
  1. Separate the garlic cloves and peel them.
  2. Put them in an ovenproof ramekin along with the thyme, a pinch of chili flakes and a couple of peppercorns.
  3. Cover with olive oil.
  4. Wrap in aluminium foil and roast in the oven at 160C (320 Fahrenheit) for 45 minutes to an hour until soft and golden.

I love garlic confit. I buy the three-pound bags of peeled garlic cloves at Sam's and poach them in olive oil on the stove until they're soft. Then I pack them in plastic bowls, covered with the oil, in the fridge or freezer. I use garlic confit in place of fresh garlic in almost every recipe that calls for it.
