This is a delicious ingredient to have in your store cupboard. It's easy to make, with ingredients you probably have lying around. It may damage your social life, but it is worth it. I add it to dips, stews and pasta sauces —Canalcook

Ingredients

of garlic

sprig
of thyme

pinch
of chili flakes

Peppercorns

Olive oil
Directions

Separate the garlic cloves and peel them.

Put them in an ovenproof ramekin along with the thyme, a pinch of chili flakes and a couple of peppercorns.

Cover with olive oil.

Wrap in aluminium foil and roast in the oven at 160C (320 Fahrenheit) for 45 minutes to an hour until soft and golden.
