Author Notes: If you're looking for something new to do with cabbage, look no further! This grilled cabbage recipe is crunchy, tangy, fresh and delicious. We were lucky enough to make this with a green cabbage grown in our backyard and also cilantro and parsley from the yard went into the dressing. Grilled cabbage makes a wonderful side dish to any meal, or could even be the star of the meal itself. The inside leaves of the cabbage get wilted and flavorful while the outside leaves get a beautiful char from the grill that creates an amazing flavor when paired with the slightly spicy dressing.First We Eat

Serves: 4

Grilled Cabbage

  • 1 Green cabbage
  • 1 Red Cabbage
  • 1/2 cup Vegetable Oil
  • 1 dash Salt
  1. Cut cabbage into six wedges making sure that the stalk of the cabbage makes it into each slice - this is what will hold you cabbage wedges together on the grill. Use a grilling brush to brush vegetable oil over the cabbage and sprinkle with a bit of salt. Put on the grill for about 5 minutes per side or until you have some grill marks and the outside cabbage leaves are soft.

Herb Lime Dressing

  • 1/4 cup Fresh lime juice
  • 1/4 cup Olive Oil
  • 3 Garlic cloves
  • 5 sprigs Fresh cilantro
  • 5 sprigs Fresh parsley
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Cayenne Pepper
  1. Add all ingredients into a food processor and blend until well combined. Pour over grilled cabbage and serve immediately. Enjoy!
