Scallion Pancake Bread

Using ready-made mix, this bread is an easy, savory take on pancakes. —Lynn Chen

What You'll Need
  • 2 cups Pancake Mix, prepared according to package directions
  • 5 ounces Cojita Cheese
  • 1/3 cup Whole, raw cashews
  • 3 Chopped scallions
  1. Preheat oven to 350 degrees. Spray a loaf pan.
  2. Prepare pancake batter according to package directions, using 2 cups worth of mix.
  3. Add in cheese + scallions
  4. Pour into loaf pan. Sprinkle the top with whole cashews.
  5. Bake for 50-60 minutes, until a knife comes out clean.
