Walnut-Rosemary Savory Granola

Ingredients
  • 2 cups old-fashioned rolled oats
  • 1/2 cup steel cut oats
  • 1/2 cup raw buckwheat groats
  • 1 1/2 cups raw walnut pieces
  • 3/4 cup raw sunflower seeds, hulled
  • 2 tablespoons fresh rosemary, chopped
  • 3/4 teaspoon coarse salt
  • 1 egg white
  • 2 tablespoons maple syrup
  • 1/4 cup olive oil
Directions
  1. Preheat the oven to 300 degrees F and lightly oil a rimmed baking sheet.
  2. In a large mixing bowl, combine the oats (both kinds), buckwheat, walnut pieces, sunflower seeds, rosemary, and salt. In a small bowl, beat the egg white very briefly, until it begins to froth, and then stir in the olive oil and maple syrup. Add this to the oat mixture, stirring it well, until everything is well-coated.
  3. Spread evenly on the baking sheet and bake for about 40 minutes, rotating the pan halfway through, or until the granola is lightly golden. (If you want more clumps of granola, do not stir; if you want no clumps, stir every 10 to 15 minutes.) Remove from the oven and let cool completely on the baking sheet. Store in an airtight container.

Has anyone tried making this without the egg whites? A family member suffers from an egg allergy and I'm wondering how I could substitute it in this recipe.

I would be concerned that the buckwheat groats and steel cut oats would be really really HARD in the finished product. Can anyone tell me that this is not so?

You know how oats have several forms, including the steel cut? Buckwheat is similar. They make flour from it, but also these groats. You might find them with the things like cornmeal, in a bag, in the 'ethnic' part of the supermarket. Kasha is also buckwheat groats, but already toasted (so don't buy that for this recipe). I imagine you could just increase the amount of the steel cut oats that you use, and skip the groats.

I'm so going to make this to garnish soup, it would be an amazing garnish on any creamy pureed soup, like squash, or parsnip or cauliflower, etc....

This is a great idea. FYI, I add rosemary to regular fruit and nut granola sometimes when I'm feeling adventurous. It add a surprising warmth and depth of flavor. Try it.

I am having it right now with plain Greek yogurt and sliced strawberries and I really like it! :) The pleasant aroma from the rosemary and the salt compliments this savoury granola well. I also love how little the use of sweetener in this recipe. I omitted the egg white. Would love to see more savoury/less sweet treats recipe :D

I love granola and can not wait to try this! Not sure why I never thought of making a savory granola...my husband is one of those folks who is not 'big' on salads. I make one every night and eats it. I do tend to treat him like a kid when it comes to salads but adding things I know he likes: olives on top (just on his), almost always some sort of toasted nuts, apples or dried fruit, etc; this will be a fun experiment...thanks!
