Porridge with sweet additions like fruit or spoonfuls of jam isn’t a new concept, but savory oatmeal is something most people haven’t tried. You can serve it with your favorite vegetables, and you can also add ham, poached eggs, and condiments like pesto or hollandaise sauce. It’s very filling, and it offers a nice change of pace from a regular sandwich or eggs on toast. —Marta Greber
Ingredients
- For the hollandaise sauce:

200 grams
(about 14 tablespoons) butter

egg yolks

lemon juice

- For the porridge:

1 cup
oats

2 cups
water

1 pinch

green pesto

1 tablespoon
Parmesan or cheddar cheese

cayenne pepper
Directions

Start by making the hollandaise sauce. Melt butter (don’t heat it too much), and in the meantime, mix all of the other ingredients in a bowl until the mixture becomes lighter in color. Very slowly add the butter to this mixture and blend until everything is well combined.

In a cooking pot, place oats and water, season with salt and pepper, and cook for about 10 minutes over a medium heat. When the porridge is thick, it's done. Mix in a tablespoon of pesto.

Make two poached eggs. Making a poached egg is not the simplest thing in the world, but it’s not as difficult as most people think. It helps to add 1 tablespoon of vinegar and 1/2 tablespoon of salt to the boiling water and then, just before adding an egg, stir the water to create a whirlpool motion.

Divide the porridge between two bowls. Sprinkle some grated cheese over top, and place avocado, ham, and a poached egg on each bowl. Finally, pour over the hollandaise sauce and sprinkle each bowl with cayenne pepper.
