This spinach casserole began its life in the cookbook that came with my first Crockpot, or perhaps it was my mother's Crockpot, since I remember eating the 1960s version of the casserole at Thanksgiving and Christmas when I was still a kid. I just can't face American cheese as an ingredient any more, so I substituted goat cheese (about 2/3 as much) and added garlic, seasoned salt, and nutmeg. The amounts can vary depending on the size of the spinach packet or bunch, and the cheese packet. It still does the comfort thing perfectly! —abbyarnold

frozen spinach, thawed and drained

cottage cheese

butter

goat cheese

beaten eggs

Directions

Mix everything together and pack into an oiled crockpot. Cook on high for 1 hour, then on low for another 4 to 5 hours. This recipe is very forgiving, so make any changes you choose!
