Author Notes: I made up this recipe when i got home on a lunchbreak and was really in a hurry. It's super tasty and you sould give it a try —Carolina Rigo
- 2 Avocados
- 2 Cloves of garlic
- 2 Shallots
- 1/4 Zucchini
- 1/2 Lemon
- The Guacamole Chop down and mash the avocado and shallot. Press down the garlic and lemon and add pepper. Mix the guacamole and set aside. For a little more sting pour 3+ drops Tabasco sauce for the best taste.
- Boil the water and add pasta.
- Pour the olive oil in a skillet. Chop then the other shallots and zucchini and mushrooms. Fry it light. Then cut up the tomatoes and the basil and then add it to the pan.
- When pasta is done, mix it with the guacamole and add the vegetables to the pan and then you have a complete meal. PS. Do you have chicken left over from yesterday, you can of course also reheat it in the pan with the vegetables and also have in it.
