The idea for this drink comes from Tara Duggan, who wrote about apple peel-infused bourbon, spiced with a bit of cinnamon and clove, in her cookbook, Root to Stalk. (Get the recipe here: https://food52.com/recipes....) It's perfect for strangely hot fall days when Mercury is in retrograde and you want to simultaneously pick apples and sit on a beach somewhere with a cool, fizzy drink. I'm in love with the idea of a cold fall-spiced drink -- it's as good a reason as any to peel a bunch of apples and stock up on ginger beer. —Marian Bull

Ingredients
  • Apple peel-infused bourbon
  • Ginger beer
  • Lime
Directions
  1. Pour a shot of bourbon into a rocks glass with ice -- it's best to use big fat square ice cubes, I think. Top with ginger beer and a squeeze of lime. That's all, folks.

This recipe was amazing! So simple yet so tasty! Even our non-bourbon drinking friends liked it!

Make sure to use fresh cinnamon sticks. And we loved pairing it with Crabbies Original Alcoholic Ginger Beer, which I highly recommend!

Made this for Thanksgiving weekend. It was very popular. I removed the clove and cinnamon stick after 48 hours and the Apple peels after 6 days. I used Trader Joe's ginger brew for the drink mixer.
