Kohlrabi, Apple, And Walnut Slaw Salad

Ingredients
  • 1 medium kohlrabi, peeled and julienned
  • 1 large apple, juilienned
  • 1/2 cup walnuts, chopped
  • 4 large scallions, chopped
  • 2 tablespoons apple cider vinegar
  • 1/4 cup walnut oil
  • 3 teaspoons maple syrup
  • salt and pepper to taste
Directions
  1. In a large bowl, mix together julienned kohlrabi and red apple pieces. Add walnuts and scallions.
  2. In a small bowl, whisk together apple cider vinegar, walnut oil, and maple syrup.
  3. Combine dressing with vegetables and toss. Season with salt and pepper to taste.

I love kohlrabi a lot and I was looking forward to a raw salad. Unfortunately, all I could taste was the vinegar and maple syrup. I won't be making this again.

A 4-star (out of 5) recipe. I confess, the only reason I made this recipe is because I had a left over bulb of kohlrabi from a previous recipe. I was optimistic, but I wouldn't have been shocked if it didn't turn out well. I mean, really "raw" kohlrabi? But julienned, it works very, very well. The balance of all the flavors makes a great slaw. We'll be making this recipe often in the future.
