Ingredients
  • 2 teaspoons olive oil
  • 1 green bell pepper, seeded and diced
  • 1 teaspoon minced garlic
  • 2 14 ounce cans black beans, rinsed and drained
  • 1 cup water
  • 2 tablespoons white wine vinegar
  • 1/4 teaspoon hot pepper sauce, or to taste
  • 1 tablespoon dried oregano
  • 6 cups cooked long grain white rice
Directions
  1. Spray a large, deep frying pan with vegetable cooking spray and heat over medium-high heat.
  2. Add peppers and sauté 2 minutes; add garlic and cook 30 seconds.
  3. Stir in beans and next three ingredients and bring to a boil. Reduce heat.
  4. Cover and simmer 5 minutes, stirring frequently. Serve with rice.
