Ingredients
-
5
cloves garlic, thinly sliced (25 g)
-
1/2 cup
heavy cream (120 g)
-
2 tablespoons
butter (28 g)
-
1
sweet onion, finely diced (220 g)
-
6 cups
spinach (174 g)
-
salt and lots of black pepper
Directions
-
Place the cream and garlic in a small pot over medium heat. Bring the mixture to a boil, remove from the heat, cover, and let steep for 10-15 minutes.
-
Meanwhile, melt the butter over medium heat. Add the onions and saute until translucent, about 4-5 minutes.
-
Add the spinach in batches, cooking until it's completely wilted. Add the garlicky cream, and saute until combined and the cream has thickened a little. Season with salt and pepper.
I always have three kinds of hot sauce in my purse. I have a soft spot for making people their favorite dessert, especially if it's wrapped in a pastry crust. My newest cookbook, Savory Baking, came out in Fall of 2022 - is full of recipes to translate a love of baking into recipes for breakfast, dinner, and everything in between!
