Ingredients

10 ounces
shiitake mushrooms

leek, cleaned and quartered

bay leaves

2
small cloves garlic, whole and peeled

1/3 ounce
thyme sprigs

1 pinch
kosher salt

2 cups
grapeseed oil
Directions

Preheat oven to 200° F.

Place all ingredients in a small, heavy, oven-safe pot with a lid.

Bake, lid on, for 6 hours, or until oil is very fragrant.

Let cool, then strain. Keep in airtight container for up to 2 weeks.
