French omelette with parisian mushrooms

Ingredients
  • 4 eggs
  • parsley
  • 2 handfuls Parisian mushrooms
  • salt and pepper
  • 1 teaspoon olive oil
Directions
  1. Start with your mushrooms sauté in a pan a (large enough for the omelet, it will be the same) with a teaspoon of olive oil (it will be evaporated before adding the eggs). Stir from time to time and add salt and pepper.
  2. Beat four eggs together in a bowl and season with salt and pepper.
  3. Once the mushrooms are cooked, pour over the eggs and add the parsley (chopped beforehand). Depending on your taste, leave more or less cooked. To me, a good french omelet is flowing but everyone’s tastes!
  4. Serve immediately with a salad. Bon appétit ????

This is a nice simple recipe! I like it :) I would also use an herb de provence sauce on top to amp up the Parisian flavours.

I wish this recipe was more detailed. What temp to cook, how long, do you mean take mushrooms off of heat and return to eggs after they are partially cooked? Do you mean leave the mushrooms in the pan and pour the eggs over the mushrooms? It's not clear, More details would be helpful. And Parisian mushrooms...button mushrooms? Why?

Sorry for not being clear, I always cook as I feel. it is button mushroom. Cooked 10 to 15 minutes they are reduced to water. Once cooked, pour the eggs (previously beaten) and leaves leather 5 minutes or more depending on your taste.
