branzino with lemon, oregano, carrots, chard, and olives

Branzino is one of my favorite fishes. It is buttery and light which I love! Here is my hearty branzino recipe. —jenny le

What You'll Need
Ingredients
  • 1 whole branzino
  • 2 whole carrots, one shaved, another chopped
  • 1 lemon
  • 6 stems of swiss chard
  • 1 cup italian parsley
  • 10 kalamata black olives
  • 2 sprigs of oregano
  • drizzle of olive oil
  • 2 cloves of pressed garlic
Directions
  1. Prepare your fish: season the inside of the branzino with salt, pepper, olive oil, and garlic. Add lemon slices, oregano, kalamata olives, swiss chard in the interior of the fish. Boil the chopped carrots and place them around the fish in a glass pan. Garnish the shaved carrots and chopped remaining parsley on top of the fish.
  2. Preheat your stove to 450 degrees. Cook the fish for 20 minutes. Take the fish out of the oven and drizzle the remaining half of the lemon on top of the fish. Enjoy!
