Author Notes: A crunch, juicy, and flavorful salad that will not wilt! Easily made ahead, recipe is adaptable and very filling! Kelli @Hungry Hobby

Serves: 3

  • 2 cucumbers, chopped
  • 2 bell peppers, chopped
  • 10 artichoke hearts in water, squeezed, chopped
  • 2 cups cherry or grape tomatoes halved
  • 2 tablespoons avocado oil
  • 1 teaspoon lemon juice
  • 1 dash garlic salt
  • 1 dash black pepper
  • 1 ounce feta
  • 12 ounces grilled chicken, chopped
  1. Chop all veggies and combine with the rest of the ingredients in a large bowl. Store in the refrigerator up to 5 days.
