Salad with preserved lemon dressing

Ingredients
  • Preserved lemon pure
  • 1/2 preserved lemon
  • 1/4 cup good olive oil
  • Dressing
  • 1 tablespoon preserved lemon pure
  • 3 tablespoons good olive oil
  • 3 tablespoons fresh lemon juice
  • 1 clove garlic, grated or minced
Directions
  1. Preserved lemon pure
  2. Discard lemon flesh and rinse. Chop into smaller pieces. Put lemon and oil in a mini food processor or blender, you want some texture, not overly pureed.
  1. Dressing
  2. Place everything in the small bowl or jar and mix.
  3. 1 Butter lettuce, cleaned and washed.
  4. Just before serving mix with lettuce.

Am i the only one that can’t figure out this recipe?

Rinse the rind. Mix with olive oil. Then mix the purée with the dressing?

Why not just mix everything?

So the pure is just rind and oil? How long will the pure last?

Yes, you only use the peel. It will last for a month or two in the fridge, but you can use not just in the dressing it works magic in rice, one tablespoon will do wonders. Add to the lame, chicken or pork marinade. Try and let me know.
