Grilled Potato Salad

These are my recipes that I just experiment with. Give me an ingredient, and I concoct. —ellens kitchen

  • Serves 6
  • 4 large white potatoes
  • Splash oil
  • Pinch salt
  • Pinch black pepper
  • 2 garlic cloves smashed
  • 1 teaspoon lemon zest
  • 1 juice of lemon
  • 1/4 cup Extra Virgin Olive OIl
  • 2 tablespoons honey
  • 5 sprigs thyme
In This Recipe
  1. Wash and slice potatoes about 1/4 inch thick. In a large bowl toss potatoes with a splash of oil, and a small amount of salt and pepper. Place potatoes on med. heat grill, and cook till tender. Cool to room temp. For the dressing combine garlic, zest, olive oil, lemon juice, honey and thyme. Whisk together, and toss into the potatoes. Taste, and adjust seasoning, adding more salt and pepper if necessary. Serve and enjoy.
