Mozzarella Stuffed Figs with Toasted Walnuts

I LOVE fresh figs, but they are only available for a short time, so while they are around, you should definitely give this dish a try.

Ingredients
  • 6 fresh figs
  • 1 piece fresh Mozzarella
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons balsamic vinager
  • 1 pinch salt & pepper to taste
  • 1/4 cup chopped walnuts
Directions
  1. Heat oven to 400 F.
  2. Once you’ve cut an "x" shape on each fig, gently stuff it with a piece of mozzarella.
  3. Drizzle with extra virgin olive oil and balsamic. Season with a little salt and pepper.
  4. Bake for 10 min.
  5. Meanwhile, in a hot skillet, toast walnuts for 5 minutes, stirring frequently.
  6. When figs come out, top with toasted walnuts and serve warm.

I have the most prolific fig trees on the planet! I have made this lots of times...however, I usually cut the fig in half; otherwise, it is too big of a mouthful of molten cheese.

Sounds simple and lovely. Often figs are stuffed with cheeses that are too strong...mozzarella is a good idea. How about using berry flavored vinegar?

Sally- What a good idea. Your suggestion made me think about some other options too like other fruit/citris vinegar or even champaign vinegar. Thanks for the idea--always nice to have new perspectives.
