Puff pastry pesto-heirloom tomato pizza

I'm a certified Master Gardener, so I get homemade goodies from the gardens of fellow MGs (like homemade lemon marmalade and pesto). I use the pesto for many things but this recipe is my favorite and it is ridiculously easy to make. My favorite heirloom to use is Green Zebra. —Nancieryan

Ingredients
  • 1 store bought puff pastry
  • 3 Heirloom tomatoes
  • 1/2 cup pesto
  • 1 cup any cheese
Directions
  1. Lay out the puff pastry sheet on a cookie sheet. Spread a thin layer of pesto (or more if you prefer). Add sliced tomatoes. Top with any cheese of your choice. I like to use feta or a mix of parmesan, romano & asiago (or all of the above!). Bake at 350 degrees until the crust has baked and the cheese has melted. Absolutely divine!
