- Slice the sweet potato lengthwise into 4 slices
- Place each slice in the toaster and toast until soft (took me 3 rounds in the toasters)
- Once cooled, top 2 slices with arugula, smoked salmon and sliced tomato.
- Top the other 2 slices with creme fraiche, sliced avocado
