Move over avocado toast, sweet potato toast is the new trend. Delicious toppings on a slightly toasted slice of sweet potato. —The Domestic Dietitian
Ingredients

sweet potato

3 slices
smoked salmon

1/4 cup
arugula
-
3 tablespoons
creme fraiche
-
1/2
avocado, sliced

1
tomato, sliced
Directions

Slice the sweet potato lengthwise into 4 slices

Place each slice in the toaster and toast until soft (took me 3 rounds in the toasters)
-
Once cooled, top 2 slices with arugula, smoked salmon and sliced tomato.

Top the other 2 slices with creme fraiche, sliced avocado
