Pistachio stuffed Apricots

While n cooking school in Sorrento Italy I earned many recipes using apricots and pistachios so developed this spread for savory crackers or to top off dried apricots. —Betty

Ingredients
  • 1 cup Pistachios
  • juice of 2 lemons Lemons
  • 1 teaspoon Sugar
  • 1 tablespoon Dried sage
Directions
  1. Blend all together in a food processor till nicely ground together Refrigerate a couple hours. Use as a spread on fresh or dried apricots Excellent spread on savory crackers!
