There’s nothing better than a proper toast. For breakfast, brunch, small lunch or dinner. I created this recipe because I wanted something satisfying, hearty, with a bit of crunch and super nutritious. —Karin
Mash the avocado with a fork, be sure you have a ripe one (it will be easy to mash), add coriander, lime juice, olive oil, a bit of salt, 1 tablespoon of pomegranate seeds (leave the other one for garnish). Mix well.
Toast the bread if you like. Put the mixture on the bread. Add the remaining pomegranate seeds and sprinkle with hemp seeds. Garnish with rucola. Drizzle honey on top for the extra sweet kick.
