Vegetable quiche with filo pastry

What You'll Need
Ingredients
  • 5 Filo sheets
  • 1/2 cup finely chopped red onion
  • 1 cup finely chopped zucchini
  • 4 eggs
  • 4 cups milk
  • salt and pepper
  • red onion and zucchini sliced
  • 3 tablespoons olive oil
  • Cheddar cheese
Directions
  1. Preheat the oven 180ºC/355 F (160/320 fan)
  2. Brush the tray with olive oil and cover whit a layer of filo pastry. Repeat with all the layers.
  3. In a jug whisk together the eggs and milk. Season with salt and pepper.
  4. Add the chopped zucchini and the red onion.
  5. Pour the mixture onto de filo base. Add the cheese on top.
  6. Put in the oven for 40 minutes until golden the filo sheets.
