Sauté 1 Tbs. butter, minced shallots and pinch of salt until soft about 7-9 minutes. Add the minced garlic and cook for about 2 minutes or until soft but not brown. Add 1/2 cup Brandy, 1/2 cup heavy cream, pinch salt and black pepper reduce by half. Finish with remaining 1 Tbs. butter.
