Mushroom pilaf with cauliflower rice

What You'll Need
Ingredients
  • Cauliflower rice
  • 1 medium cauliflower (about 2 pounds)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon sea salt
  • 15-20 saffron threads
  • 3-4 tablespoons sunflower oil
  • Mushrooms
  • 3 tablespoons sunflower oil
  • 4 cloves of garlic, minced or grated
  • 1 pound mushrooms, sliced (I had mix button and oyster mushroom)
  • 1-2 small sprigs fresh thyme
  • 2 tablespoons chives, finely chopped
  • 1/3 cup freshly chopped parsley
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
Directions
  1. Cauliflower rice
  2. Cut cauliflower into florets.
  3. Mix garlic powder, onion powder, salt and saffron threads which you rubbed between the palm of your hands in a separate small bowl.
  4. First place oil over cauliflower and mix then sprinkle with seasoning.
  5. Roast at 400 F degrees for 35-40 minutes. Let slightly cool. In batches process in food processor till you archive consistency of the rice or any way you like.

  2. Place oil, garlic, mushrooms and thyme in the pan and sate for 3-4 minutes.
  3. Add chives, parsley, salt and freshly ground pepper. Keep sautéing until most of the juice evaporates.
  4. Mix cauliflower and mushrooms and serve.
