Ingredients
- Cauliflower rice

medium cauliflower (about 2 pounds)

garlic powder

1 teaspoon
onion powder

1/2 teaspoon
sea salt

saffron threads

3-4 tablespoons
sunflower oil
- Mushrooms

3 tablespoons
sunflower oil

cloves of garlic, minced or grated

1 pound
mushrooms, sliced (I had mix button and oyster mushroom)

small sprigs fresh thyme

2 tablespoons
chives, finely chopped

1/3 cup
freshly chopped parsley

1/2 teaspoon
sea salt

1/2 teaspoon
freshly ground black pepper
Directions
- Cauliflower rice

Cut cauliflower into florets.

Mix garlic powder, onion powder, salt and saffron threads which you rubbed between the palm of your hands in a separate small bowl.

First place oil over cauliflower and mix then sprinkle with seasoning.

Roast at 400 F degrees for 35-40 minutes. Let slightly cool.
In batches process in food processor till you archive consistency of the rice or any way you like.
- Mushrooms

Place oil, garlic, mushrooms and thyme in the pan and sate for 3-4 minutes.

Add chives, parsley, salt and freshly ground pepper. Keep sautéing until most of the juice evaporates.

Mix cauliflower and mushrooms and serve.
