I always have madjool dates on hand because I eat them in my morning gruel(which was my original recipe I was going to enter). Instead this is a favorite side I love to make. It can accompany pretty much anything, elevating any dish to the next level! —Kevin McKone
Preheat oven to 225*f. Cut the strips of bacon lengthwise and trim to make nice strips. Wash and trim the asparagus. Remove the pit & cut each date into 4 strips. Press the date strips against the bottom half of the asparagus, then wrap the bacon strips around the date. Drizzle with olive oil and lightly season, then roast in the oven for 12 minutes, flipping halfway through. Enjoy!
