Kısır is traditionally made with bulgur wheat which is a spicy Turkish salad meze. For those who love kısır but have a gluten intolerance this is the perfect dish —Gamze Mutfakta (Piper Nigrum)

Ingredients

Buckwheat

3-4 pieces
scallions

1 tablespoon
pepper paste

tomato paste

2 tablespoons
pomegranate molasses

lemon juice + zest

1/2 cup
EVOO

cucumber
-
1/2 bunch
parsley

1/2 bunch
fresh mint

green pepper

red pepper

salt&pepper
Directions

Soak buckwheat in water for an hour. Then boil the seeds until they are soft. Strain excess water, add pepper and tomato paste and mix well and let it cool.

Clean and wash the greens and finely chop them. Mix everything together and place the salad in a large serving dish.
