Kısır is traditionally made with bulgur wheat which is a spicy Turkish salad meze. For those who love kısır but have a gluten intolerance this is the perfect dish —Gamze Mutfakta (Piper Nigrum)

What You'll Need
Ingredients
  • 1 cup Buckwheat
  • 3-4 pieces scallions
  • 1 tablespoon pepper paste
  • 1 tablespoon tomato paste
  • 2 tablespoons pomegranate molasses
  • 1 lemon juice + zest
  • 1/2 cup EVOO
  • 1 cucumber
  • 1/2 bunch parsley
  • 1/2 bunch fresh mint
  • 1 green pepper
  • 1 red pepper
  • salt&pepper
Directions
  1. Soak buckwheat in water for an hour. Then boil the seeds until they are soft. Strain excess water, add pepper and tomato paste and mix well and let it cool.
  2. Clean and wash the greens and finely chop them. Mix everything together and place the salad in a large serving dish.
