Massaged Kale Salad in a Minute

Hate the chore of massaging your kale? Make it simple with this one quick trick. —Chris W.

What You'll Need
Ingredients
  • 1 bunch Kale
  • 1/2 cup Blue Cheese
  • 1 pinch Salt and pepper
  • 1 small shallot minced
  • 1/4 cup toasted walnut pieces
  • 1/4 cup dried cranberries
Directions
  1. Wash, dry, stem and chifonnade your kale.
  2. Combine cheese, vinegar, shallot and olive oil in a bowl.
  3. Add salt and pepper, then cheese and olive oil and mix on low until dressed and massaged to your liking.
  4. (And feel free to substitute lemon juice for vinegar, feta or chevre for blue cheese, raisins or diced apples for cranberries and pecans for walnuts... you get the idea..)

How much olive oil and vinegar? Do you like a certain vinegar?

Why bother? toss kale in dressing and let sit for 10-15 minutes while going aobut the rest of your kitchen business. Add the resto of the ingredients and toss again and serve. Nice tender kale, nicely dressed salad, no extra fuss or bother!!
