Golden raisins, allspice, and cumin make this super quick and easy side dish an all-around winner. —Debbie Noel
Ingredients

1 cup
rice

1 1/2 cups
chicken stock

2 tablespoons
olive oil

garlic cloves (minced)

1/4 cup
onion (diced)

1/2 cup
golden raisins
-
1 teaspoon
coarse salt

1 teaspoon
black pepper
-
1/2 teaspoon
allspice
-
1/2 teaspoon
nutmeg
-
1/4 teaspoon
cumin
-
2 tablespoons
butter
Directions
-
Add olive oil to Instant Pot and select Sauté setting

Sauté diced onion and minced garlic until ingredients start to brown (about 2-3 minutes)

Add chicken broth, rice, golden raisins, and spices to Instant Pot
-
Place lid on, and make sure indicator is set to Sealing
-
Set for 10 minutes on HIGH using the Manual setting
-
Once pressure has built up and the 10 minutes is complete, let pressure come down naturally for 10 minutes

Let steam out by turning the indicator to Venting and open lid

Add butter and fluff rice with a fork
-
Serve immediately or store in a glass container in your refrigerator
