Seasonal Fall Veggie Recipes —Tyler

Ingredients

6 cups
Cauliflower florets

2 tablespoons
Extra-virgin olive oil

1 teaspoon
Black pepper

1 1/2 teaspoons
Sea salt

1 teaspoon
Paprika

Garlic cloves, chopped
Directions

Bring 2 inches of water to a boil in a large saucepan fitted with a steamer.

Add cauliflower. Cover and cook for 8-10 minutes or until tender.

Place the cauliflower in a food processor and add the remaining ingredients. Process until very smooth.

For a tasty twist add 1/4 cup of your favorite low-fat cheese. I prefer cheddar or Swiss!
