Ingredients
  • 1/2 cup raw cashews
  • 1/4 cup coconut milk
  • 2 cups roasted pumpkin, or other squash
  • 1 1/4 cups water
  • 1/2 cup agave nectar
  • 1 tablespoon vanilla extract
  • 1 tablespoon cinnamon
  • 1 teaspoon ginger
  • 1/2 teaspoon nutmeg
Directions
  1. In a Vitamix combine cashews, coconut milk, pumpkin, water and agave
  2. Blend ingredients on high speed until smooth
  3. Add vanilla, cinnamon, ginger and nutmeg
  4. Pour mixture into an ice cream maker and process according to instructions
  5. Serve
