Creamy Country White Mushroom Gravy

What You'll Need
Ingredients
  • 3 tablespoons Fat ( chicken, pork, butter, pan drippings )
  • 3 tablespoons Flour
  • 3 cups whole milk
  • 2 cups sliced mushrooms ( I prefer shiitakes ) sauteed in 1 T butter
  • 1.5 teaspoons salt (or to taste)
  • 1.5 teaspoons pepper ( should be peppery )
Directions
  1. Heat fat over medium heat. Add flour 1 Tablespoon at a time whisking continuously. Cook stirring frequently for 3-4 minutes.
  2. Add milk a 1/2 cup or so at a time, whisking constantly. Reduce heat to medium low and simmer for 10 minutes or until well thickened.
  3. Add simmered mushrooms, salt, and pepper.
  4. Serve over buttermilk biscuits, mashed potatoes, grits, or your favorite starchy vessel for flavor.

This base recipe has great flavor, but both the salt and pepper amounts are way off. This would be inedible with 1.5 tablespoons of pepper. I added salt and pepper to taste and this was really good. Will make again. Thanks!

I should have specified 'kosher' salt. Kosher salts bigger flakes means less salt by volume than table salt. Better still would have been to say 'salt to taste'. If there is salt in whatever fat you use, you wouldn't need to add as much.

I've switched to a plant based diet since I submitted this article. Maybe I should submit a new post for plant based creamy mushroom gravy.
