Chicken and Broccoli Over Egg Noodles

A light and tasty meal of marinated chicken, carrots, broccoli, broth, and seasonings, served over egg noodles. —Dash of Amy

What You'll Need
  • Chicken
  • 4 chicken breasts, cubed
  • 1 tablespoon olive oil
  • 1 tablespoon cooking sherry
  • 1 tablespoon soy sauce
  • 1 teaspoon sea salt
  • 1/2 teaspoon basil
  • 1/4 teaspoon black pepper
  • Vegetable & Broth Mixture
  • 1 tablespoon olive oil
  • 3 organic shredded carrots
  • 1 bag frozen broccoli florets
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon basil
  • 1/4 teaspoon black pepper
  • 3 tablespoons cooking sherry
  • 2 1/2 cups chicken broth
  • 1 bag of egg noodles
  • 1/4 cup Parmesan cheese for the top (dry and fresh)
  • 3 garlic cloves, minced
  1. Chicken
  2. Place chicken in a dish with some depth, and add marinade ingredients; mix well.
  3. Heat a deep skillet over medium heat, add olive oil and chicken.
  4. Cook the chicken until almost fully cooked, leave slightly pink in the center.
  1. Vegetable & Broth Mixture
  2. Using the same pan the chicken was cooked in, heat it over medium and add the olive oil and carrots; cook for 2-3 minutes.
  3. Add the garlic and broccoli, mix well and cook another couple minutes.
  4. Add sherry, broth and spices, and bring to a boil.
  5. Add the chicken to the broth and cook for another 2-3 minutes until chicken is completely cooked through.
  6. Pour mixture over cooked egg noodles and sprinkle the top with Parmesan cheese.

This was great! I needed something quick that didn't require already cooked chicken and would get my kids to eat vegetables. Thank you! Pinning it to "food my kids ate!"

I’m always hesitant to try a recipe with no reviews but I was craving egg noodles with chicken but didn’t want a heavy or creamy sauce. Somehow I stumbled upon this recipe and I’m so glad I did! I only had fresh carrots and broccoli so I sliced the carrots thinly and chopped my broccoli but this was very delicious! I was also afraid with it being so simple it would lack flavor but it definitely didn’t! Even my extremely picky 6 year old who hates all sauce except ketchup asked for more sauce to dip his chicken in. Thank you for sharing this recipe! I did notice the directions asked for garlic but it wasn’t listed in the ingredients. I just winged it for that part. I’ll for sure make this again!

This looks great! I am going to try it tonight. I have 1 very picky, very skinny little eater at home and she loves chicken and egg noodles. The other 2 eat anything I put in front of them. This seems light enough for a 90 degree day!
