Zucchini Fritters

What You'll Need
Ingredients
  • 1 Zucchini grated
  • 3 tablespoons Corn starch/flour
  • 1/4 cup All-purpose flour
  • 1 teaspoon Black Pepper powder
  • 2 tablespoons Light olive oil/Canola oil
  • 1/4 Shredded Cheese-
  • 1 teaspoon Minced Garlic
  • 2 Chopped Green chilly(optional)
  • 1 Egg
Directions
  1. Mix the grated zucchini and salt well and let it sit for 5 mins until all the salt is absorbed and the zucchini releases water.
  2. Take some paper towel/ cheesecloth to wrap the grated zucchini and squeeze out the excess liquid.
  3. Now in a large bowl, mix rest of the ingredients along with the zucchini and combine well.
  4. Heat a cast iron skillet or a nonstick pan and add some oil or use cooking spray.
  5. Once the pan is hot, use an ice cream scoop to scoop the batter into the pan and when it turns golden brown, flip the sides.
  6. Fry all the fritters and place them on a paper towel to absorb the excess oil.
  7. Serve hot as a snack along with tea or as an appetizer.
