Jam Cake with Black Walnuts

This recipe has been handed down for generations in my husband's family. One aunt knew the recipe "by heart". It's what all the men want
for their birthdays. It is often served with caramel icing. —celiehenshaw

Ingredients
  • 2 cups sugar
  • 2/3 cup lard
  • 2 eggs
  • 2 cups buttermilk
  • 3 cups all-purpose flour
  • 1 1/2 teaspoons cloves
  • 1 1/2 teaspoons allspice
  • 2 teaspoons cinnamon
  • Pinch salt
  • 1 teaspoon vanilla
  • 2 tablespoons cocoa
  • 2 teaspoons soda
  • 3/4 cup jam
  • 3/4 cup black walnuts
Directions
  1. Heat oven to 350 degrees.
  2. Cream sugar and lard.
  3. Add eggs.
  4. Beat well.
  5. Sift flour with cloves, allspice, salt, soda, cinnamon and cocoa. Add to sugar mixture alternately with buttermilk.
  6. Add jam and nuts.
  7. Makes three layers. Bake 25 minutes or until toothpick test shows it's done.
