GF Oat-Almond Waffles (Yeasted Overnight)

Ingredients
  • 1/2 cup oat flour plus 1 tbs
  • 1/4 cup GF flour
  • 1/2 cup almond meal
  • 1 cup milk
  • 2 tablespoons butter
  • 1 pinch salt
  • 1 packet or 2 tsp active dry yeast
Directions
  1. Dissolve yeast in 1/2 cup warm water. Add warmed melted butter and milk. Add salt. Gently mix in oat flour and GF flour. Set on the counter overnight.
  2. After proofing overnight, gently mix in the almond meal. The batter is ready.
  3. Note: The batter should be on the thinner side and pour easily, which will give room for the batter to expand to a light, flaky texture while cooking in the cosy waffle griddle.

Didn't work at all--there isn't any binder here. Total mess and waste of ingredients.

I am sorry to hear about your experience. As the overnight-yeast is the only leavening agent in this recipe, and as I have since learned about choux pastry that utilizes steam and starch for leavening structure, I now understand results may differ based on GF flour blends. To set up the recipe for future success, I will schedule to test with various GF flours available. Thank you for your review.
