Banana Oat Blender Pancakes

Hearty, gluten-free pancakes you can make entirely in your blender. —Garden and Grain

What You'll Need
Ingredients
  • 1 cup non-dairy milk
  • 2 cups rolled oats
  • 1 medium ripe banana
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1 pinch salt
  • Optional: Favorite topping like fresh fruit, jam, chocolate chips, etc
Directions
  1. Add the rolled oats to your blender and blend until you have a fine flour (1-2 mins)
  2. Toss in all other ingredients and blend until smooth.
  3. Heat a pan or skillet.* Pour or scoop out approximately ¼ cup of batter. When the edges start to become solid and bubbles form, flip! Repeat for the remaining batter. Plate and tops with more banana, syrup or your favorite toppings!
