A super healthy and tasty dip made with black beans, corn, avocados, green onions, fresh cilantro, and a lime dressing. It's a crowd pleasing appetizer, and it's vegan! —Dash of Amy

Ingredients
  • Salsa
  • 16 ounces can black beans, drained and rinsed
  • 16 ounces can corn, strained
  • 1 tomato, finely chopped
  • 1 avocado, diced
  • 1 bunch green onions, sliced
  • 1 bunch fresh cilantro, finely chopped
  • Dressing
  • 1/2 cup olive oil (light for milder flavor)
  • 1/3 cup fresh lime juice (about 2 limes)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 5-8 dashes Frank's red hot sauce
Directions
  1. Salsa
  2. Combine all ingredients in a large bowl and mix.

  2. Whisk together all the dressing ingredients until it thickens, and pour over the salsa.
  3. Refrigerate for at least one hour before serving.
