Mung Bean Rotini with Peas and Mint

  • Prep time 10 minutes
  • Cook time 5 minutes
  • Serves 4
  • 2 tablespoons olive oil
  • 3/4 cup green peas, cooked
  • 1/4 cup Fresh mint, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
In This Recipe
  1. Cook rotini according to package instructions. Toss rotini with olive oil, peas, mint, salt and pepper.
  2. Add optional ingredients if desired. (5 medium strawberries, sliced or 5 cherry tomatoes, sliced plus fresh basil, chopped or 2 round red radishes, sliced thin and/or 2 oz. feta cheese, crumbled)
  3. Garnish with mint sprigs.
