Mom's Favorite Blueberry-Bran Muffins

Inspired by Trader Joe's Moral Fiber muffins, these blueberry and bran beauties are tender, not-too-sweet packages of whole-grain goodness. They're *almost* vegan, too, because they contain honey. —Jake Cohen

Ingredients
  • 1 1/2 cups wheat bran
  • 1 1/4 cups white grape juice
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 1/3 cup safflower oil
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1 very ripe banana, mashed
  • 1 1/4 cups blueberries
Directions
  1. Preheat the oven to 350° and line a muffin tin with 12 liners. In a large bowl, mix the wheat bran and grape juice into a paste. Let sit for 15 minutes.
  2. Meanwhile, in a medium bowl, whisk together the flour, baking soda, baking powder and salt.
  3. To the wheat bran paste, stir in the oil, honey, vanilla and banana until smooth. Fold in the dry ingredients until smooth, followed by the blueberries. Divide the batter between the muffin liners (about 6 tablespoons per muffin).
  4. Bake until golden brown and a toothpick comes out clean when inserted in the center, 30 to 35 minutes. Let cool completely, then serve.

I make a batch of these every week - they're an absolute staple in my house and the recipe is perfect. It's also worth noting that using previously frozen blueberries both turns the batter purple and adds too much moisture. Fresh is much better.

These are really almost exactly like the “Moral Fiber” muffins. I, too, called corporate to find out what was going on when they no longer had the muffins. These baked up perfectly! Thank you!
