Stone Fruit and Heirloom Tomato Caprese

Though there is no reason to mess with perfection, if you can get your hands on some perfectly ripe peaches or nectarines they take a traditional caprese to the next level. —What We Eat Gals

Ingredients
  • 4 Heirloom tomatoes
  • 4 Mixed stone fruits (peaches, nectarines, plums, etc.)
  • 1/2 Ball of fresh Mozzarella
  • 1/4 cup Mint, torn
  • 1/4 cup Basil, torn
  • 1 Lemon, zest and juice
  • Extra virgin olive oil, to drizzle
  • Maldon salt and pepper, to taste
Directions
  1. Slice tomatoes into perfectly imperfect pieces. Do the same with the stone fruit. Break apart the mozzarella ball using your fingers. Layer the tomatoes, stone fruit and mozzarella onto a shallow dish. Top with herbs and the zest of a lemon. Squeeze fresh lemon juice over the salad and drizzle generously with extra virgin olive oil. Finish with a shower of Maldon salt and fresh ground pepper. Enjoy!
