Cheesy Beef Stuffed Peppers

Yellow, green, and red peppers stuffed with a delicious combination of grass fed beef, onions, bread crumbs, and cheese. Baked and topped with fresh basil. —Dash of Amy

Ingredients
  • 3-4 peppers, assorted colors, sliced in half, seeds removed (assortment of colors)
  • 1 pound grass fed ground beef
  • 1/2 onion, diced
  • 1/2 cup Italian bread crumbs
  • 1/3 cup dried Parmesan cheese
  • 1 egg
  • 2 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1 bunch fresh basil, divided
  • 2/3 cup shredded mozzarella cheese, divided
  • 1-2 cups Marinara sauce
  • 1/3 cup fresh Parmesan cheese
Directions
  1. Cut the peppers in half and pull out the seeds.
  2. In a large mixing bowl combine the beef, bread crumbs, Parmesan cheese, 1/3 cup Mozzarella cheese, egg, tomato paste, garlic, salt, pepper, and half of the fresh basil.
  3. Mix well, using your hands to get the mixture combined.
  4. Place a heaping spoonful of the meat mixture into each pepper, pressing it down.
  5. Place the stuffed peppers in a baking dish, pour the sauce evenly over the top, then sprinkle with the fresh Parmesan cheese and 1/3 cup of the Mozzarella cheese.
  6. Cover with foil, and bake for 30 minutes at 400*.
  7. Sprinkle the fresh Parmesan cheese and 1/3 cup of the Mozzarella cheese evenly over the peppers, cover again, and bake an additional 15 minutes.
  8. Sprinkle the cooked peppers with fresh basil, and serve hot.
